Tteokbokki (떡볶이), or simmered rice cake, is a popular Korean food made from small-sized garae-tteok called tteokmyeon or commonly tteokbokki-tteok. Eomuk, boiled eggs, and scallions are some common ingredients paired with tteokbokki in dishes. It can be seasoned with either spicy gochujang or non-spicy ganjang -based sauce; the former is the most common form, while the latter is less common and sometimes called gungjung-tteokbokki.

Rice cakes are soft and chewy and are commonly sold by street vendors in Korea, but it is now also available in Riga (Latvia), Tallinn (Estonia) and Vilnius (Lithuania). The rice cakes provide a chewy texture while the sauce is packed with flavour!

These rice cakes can be used for soup, hot pot or stir-fried dishes. Hint! This dish is very easy to make vegan!

Ingredients:

350g Korean rice cakes

150g Korean fish cakes, rinsed over hot water & cut into bite-size pieces

60g green onion, sliced

Tteokbokki sauce (Mix these in a bowl):

3 Tbsp Korean chilli paste

1 1/2 Tbsp raw sugar/honey

1 Tbsp soy sauce

1 tsp minced garlic (optional)

1 tsp Korean chilli flakes (optional)

Garnish

1 tsp roasted sesame seeds

1 stalk green onion, finely chopped

HOW TO MAKE TTEOKBOKKI

  1. Unless your rice cakes are soft already, soak them in warm water for 10 mins.
  2. Dissolve the tteokbokki sauce by stirring it with a spatula. Put on the pot and boil on medium heat, add the rice cakes, fish cakes and green onion. Boil them for a further 3 to 5 mins until the rice cakes are fully cooked. Then, to thicken the sauce and deepen the flavour, simmer it over low heat for a further 2 to 4 mins.
  3. Add the sesame seeds. Serve warm.
