Instructions:
1. Bring a pan of water to a boil - use 10 cups of water for every 1 cup of tapioca pearls.
2. Add the pearls slowly and stir gently.
3. Wait until they rise to the surface.
4. Reduce to a simmer and cook for 5-8 minutes until soft, stirring regularly.
5. Transfer to a bowl of cold water for 20 seconds.
6. Scoop out the tapioca pearls and mix them together with sugar or honey for a quick dessert.

If you want to make them for bubble tea:

1. Brew a cup of your favourite tea and let it cool.
2. In a shaker, combine 1 cup of ice, 1/2 cup of brewed tea, and 1/4 cup of milk (or non-dairy milk).
3. Add 2-3 tablespoons of simple syrup or honey (to taste) and shake well.
4. Pour the mixture into a glass.
