Hot and Spicy Hot Pot (serves 4)

Hot pot or hotpot, also known as soup-food or steamboat, is a cooking method that originated in China.Ingredients:

  • Choose fresh ingredients for the hot pot. These are some of our recommendations (choose the ones you prefer).
  1. Meats: sliced beef, sliced lamb, shrimp, squid, or replace with tofu and fried bean curd.
  2. Mushrooms and vegetables: lettuce (torn into large pieces), spinach, napa cabbage (sliced), baby napa cabbage (quartered), baby bok choy (quartered or halved), gai lan (cut to bite size), cauliflower and broccoli (cut to bite-size florets), sliced lotus root, sliced potato, sliced sweet potato, sliced daikon, sliced winter melon, sliced squash, and corn on the cob (cut to 2-inch long round pieces).
  3. Noodles and dumplings: vermicelli, udon noodles and dumplings, rice cakes. (get yours here)
  4. Other ingredients: sliced seaweed, rehydrated wood ear mushrooms, bamboo shoots (sliced to bite-size), and tied shirataki noodles

How to make it:

  1. Wash and chop all the ingredients.
  2. Prepare any dipping sauces if you'd like.
  3. Add Lee Kum Kee Sichuan Hot and Spicy Soup Base For Hot Pot into water.
  4. Bring to a boil.
  5. Add fresh ingredients one at a time so as to not overcook. (Only cook what you plan to eat in the next few minutes)
  6. Once done, transfer it to your plate and enjoy!
